HAMBURGER NIGHT

Lo so, lo so, non ho mantenuto la promesso...altro che 1 post alla settimana, non ho pubblicato nulla per 1 mese!!!!!!! Sob!
Ma ora, grazie anche alla "clausura forzata" di questo weekend, dovuta mio piccolo malato, ho non uno, ma ben 2 post per voi!
Oggi inizio con il piatto forte della nostra "Hamburger night"... hamburger e patatine! Tutto rigorosamente fatto in casa, anche il pane (con una delle ricette della mitica Felix)! Davvero felice!!! Quante volte nei miei viaggi tra USA e Canada ho guardato gli altri mangiare hamburger spaziali e io mi sono accontentata della solita insalata... ieri mi sono tolta una soddisfazione!!! Ricetta da ripetere al più presto!


HAMBURGER ARTIGIANALI


INGREDIENTI per 4 persone:
Per il pane

156 g farina Farmo Fibrepan per pane
76 g farina Glutafin Select
68 g farina Agluten per pane
90 g latte tiepido
90 g acqua tiepida
1 uovo da 60 g
20 g burro morbido
5 g sale
12 g zucchero
13 g lievito di birra fresco
Per la farcitura
4 hamburger di manzo (potete prendere la carne macinata e pressarla con l'apposito attrezzo o farveli preparare dal vostro macellaio di fiducia)
4 foglie di lattuga
pomodoro a fette sottili
fette di bacon certificato senza glutine
4 fette di formaggio edamer
ketchup o altra salsa a piacere certificata senza glutine
Patatine fritte per accompagnare


Per il pane
Sciogliere il lievito nel latte tiepido, mettere tutti gli ingredienti nella ciotola della planetaria e impastare per 5 minuti circa.
Coprire con la pellicola trasparente e far lievitare per circa 1 ora e 30 minuti in luogo tiepido (io accendo il forno, lo porto a 50°C, poi lo spengo e metto dentro la ciotola con l'impasto).
Prelevare poi l’impasto, formare 4 panini (su un piano ben infarinato) e far lievitare ancora 1 ora coperti e in luogo tiepido.
Scaldare il forno a 200°C (con la pietra refrattaria dentro) almeno 30 minuti prima della fine della 2° lievitazione.
Spennellare la superficie di ciascun panino con uovo sbattuto, cospargere di semi di sesamo e cuocere per 20 minuti.

Per la farcitura
Cuocere il bacon in una padella ben calda, finché sarà appena croccante (non troppo asciutto).
Cuocere gli hamburger su una piastra ben calda.
Tagliare a metà i panini ancora caldi, farcirli con prima con la carne, poi con il resto degli ingredienti, chiudere, servire con patatine fritte.

Un successone, apprezzato da grandi e piccini!!!!

But now, thanks to the "forced cloistered" of this weekend, due to my sick child, I have two posts for you! 
Wh organize a "burger night" and we prepared... burgers and fries! All strictly homemade, even the bread (with one of the recipes of the legendary Felix)! Really happy! How many times in my travels between the U.S. and Canada I watched the others eat burgers while I was eating a salad ... yesterday I had my satisfaction! Recipe to repeat soon! 



HOME MADE HAMBURGER

Ingredients for 4 people:
For the bread
156 g gluten free flour - Farmo Fibrepan
76 g gluten free flour - Glutafin Select
68 g gluten free flour - Agluten
90 g warm milk
90 g warm water
1 egg (60 g)
20 g butter, softened
5 g salt
12 g sugar
13 g fresh yeast
For the filling
4 beef burgers (you can take the ground meat and press it with the appropriate tool or have it prepared by your butcher)
4 lettuce leaves
tomato , thinly sliced
slices of bacon (certified gluten-free)
4 slices of edam cheese
ketchup or other sauce to taste (certified gluten-free)
French fries to accompany


For the bread
Dissolve yeast in warm milk, put all the ingredients in the bowl of the mixer and knead for about 5 minutes.
Cover with plastic wrap and let rise for about 1 hour and 30 minutes in a warm place.
Take the dough, form 4 buns (on a well- floured surface) and let rise about 1 hour covered and in a warm place.
Heat oven to 200°C (with a baking stone inside) at least 30 minutes before the end of the 2nd rise.
Brush the surface of each bun with beaten egg, sprinkle with sesame seeds and bake for 20 minutes.

For the filling
Cook the bacon in a hot frying pan, until it is just crispy (not too dry).
Cook the burgers on a hot plate.
Halve the buns when are still hot, fill with the meat first, then with the other ingredients, close, serve with fries.
